1-1/4 C mayonnaise (not Miracle Whip)
¼ C finely chopped fresh cilantro
¼ C chopped celery
¼ C finely chopped red onion
¼ C chopped red bell pepper
2 tsp Tabasco
2 tsp mustard
1 tsp white vinegar
½ tsp salt
¼ tsp sugar
2 lbs. red potatoes, cooked and cubed
(remove some of the skins)
In large bowl, combine all ingredients except potatoes.
Stir in potatoes.
Cover and chill to blend flavors.
(It will seem like too much mayonnaise at first, but it will absorb.)
